This week for Sweet Melissa Sundays, Jennifer of Keep Passing the Open Windows picked Lemon Ice Box Cake with Fresh Strawberry Sauce for us to try. I have to admit this had me fooled until I read through the recipe. Up until then I thought an ice box cake was a loaf shaped cake, layered with whipped cream frosting, and kept in the freezer or fridge until serving. This was more of a crushed cookie crust, cooked custard with stiff egg whites mixed in, topped with meringue, and then frozen. Something completely new to me, which is always fun!
Here is the starting point, a crushed up vanilla wafer cookie crust, followed by the custard and meringue combo...
Then topped with meringue...
Briefly baked to set and brown the meringue, cooled to room temperature, and set uncovered in the freezer overnight...
We haven't had the chance to try this yet but we will this afternoon, I have a feeling we are going to love this one, all cool and lemony, yum :)
