Sweetheart Tartest Lemon Tart -- Tuesdays with Dorie



Time for our weekly Tuesdays with Dorie treat! This week's selection, Tartest Lemon Tart, was picked by Babette of Babette Feasts, thank you Babette! This recipe is something completely new to me, I've never made a baked custard tart, and have never used so much 'complete' lemon in one recipe.


The above photo is the tart going into the oven, it's actually baking right now. Way to wait until the last minute, right? Sorry, forgive me please, it's just been one of those weeks.


Here is my tart shell after the first baking, I used a Wilton heart shaped tart pan with removable bottom. I followed the ingredient list pretty closely, I did find that I needed to add a few tablespoons of water to my tart dough in the food processor, it just was not coming together. For my free choice of what nut to use in the 'sweet tart dough' I used macadamia nuts, which are probably tied with cashews as my favorites -- oh wait, I almost forgot about my friend the pistachio, love you too 'tach, we can have a three-way tie :)


Here is the filling ready to be blended up. I was actually kind of surprised how easy it was to blend those lemons, I was expecting to need a new blender by the end of the night, but my old one pulled through just fine.


I guess this is just going to have to be a teaser post for my early morning (or night owl) TWD friends, photos of the completed tart and my thoughts on the taste shall be up tomorrow. Thanks for visiting!

UPDATE -- as you can tell by the new top photo on this post, my tart is done! This was a fun baking project, I think it turned out just like it was supposed to, maybe my tart crust was a little thick, but I like it that way. My first impression was 'lemon bars' which I love, but then I got a few bitter bites. They were okay, not too too bitter, but kind of surprising. I was expecting more 'sour' or 'tart' but not 'bitter' oh-well, guess I should have expected it. I'm kind of wishing I went with some of the suggestions on P&Q about removing pith, etc. but I don't know if that would have been worth it in the end. I like the idea of tossing it all in the blender and didn't want to lose that ease of the recipe.

My taste testers were my kiddos, and would you believe my two youngest loved this? Especially my almost two year old, he could not get enough! My daughter was not a fan, she said it was too sour, and 'it jiggled my cheeks' :) Out of the mouths of babes.
